Fine, mineral, flawless.
At Domaine Louis Michel et Fils, making Chablis means precision work. Crystal clear and almost opposite to the lush Burgundies that mature in their oak barrels just a few kilometers to the south. "Chablis is not Meursault," is the Michel family's catchphrase. No matter who you ask about it, they will repeat it emphatically, explaining the importance of this premise to the winery's incomparable identity.
Louis Michel, his son Jean-Loup and his nephew Guillaume, all pay due respect to their wines through fine restraint with wood. More than forty years ago, Louis Michel had banned all wooden barrels from his cellar and thus became a pioneer of pure aging in stainless steel tanks. His successors have remained true to this maxim. Louis' grandson Guillaume Cicqueau-Michel, who now runs the Domaine Louis Michel et Fils, also prepares this Chardonnay in pure culture. With his unmistakably terroir-typical Chablis wines, which could convince not only in France professional world.
