The Diego by Bodega de Moya from the Spanish region of Valencia is a wonderful, fresh white wine cuvée from the Merseguera (70%) and Chardonnay (30%) grape varieties. The winemaker dedicates the white wines to a man from his family or his closest circle of acquaintances - Diego gave Yves Laurijssens the idea to use the Bobal grape.
In the glass, this wine presents itself in a clear straw yellow with glittering highlights. The nose reveals an expressive aroma - from quinces, juicy apple and ripe apricot, fresh hazelnuts and roasted almonds to freshly baked bread. Thanks to storage on the yeast, the nutty notes and aromas of brioche continue on the palate. The body is pleasantly full with a soft tannin structure. The finale is fresh, long-lasting and the complex variety of aromas is once again evident thanks to the yeast storage.
Vinification of Diego Merseguera Chardonnay De Moya
The vines of the Chardonnay grapes and Mersegura grapes are about 25 years old and are located at an altitude of 1050 m above sea level.
The grapes are picked early in the morning by hand in 15 kg boxes and already selected in the vineyard. The harvested material is then cooled in the wine cellar for 24 hours at 4 degrees Celsius - the cold maceration is also 24 hours. The fermentation at a controlled temperature takes place at 50% of the must in stainless steel tanks and at 50% in French oak barrels. The yeast is aged for a total of 6 months.
