Once again, hints of white currant and gooseberry appear. In the aftertaste, mineral notes of the soils dominated by gravel and sand are added.
Vinification of the Cuvee This Brut from Borgo Molino
The elegant Cuvee This Brut from Italy is a cuvée made from the grape varieties Glera and Riesling. The grapes grow under optimal conditions in Veneto. The vines here dig their roots deep into soils of sand, gravel and marl. After harvesting, the grapes are brought to the winery by the fastest route. Here they are sorted and carefully broken up. This is followed by fermentation of the base wines according to the Metodo Ganymede. In this process, the resulting carbon dioxide is directed past the marc cap and blown in from the side, so that the cap is well mixed. This not only ensures a higher aroma extraction, the Co2 also provides more hygiene in the tank, so that finally less sulfurization is required.
