Vinification of Cont 'Ugo Bolgheri DOC by Guado al Tasso
Since 2011, it has been possible to exploit the potential of the vineyards in the Bolgheri DOC cultivation area for a pure Merlot.
For the Cont 'Ugo Bolgheri DOC, the best Merlot grapes from the vineyards of Guado al Tasso were selected, harvested manually and selected again in the wine cellar. Alcoholic fermentation and maceration takes place in stainless steel tanks. The fermentation temperature is controlled according to the degree of ripeness of the grapes: some at low temperatures to obtain a better aromatic freshness, others at 30°C, for better extraction of the polyphenols and for the structure.
These so different merlots are now filled separately into barriques, 1/3 of which are new, in which the malolactic fermentation is completely carried out by the end of the year. This is followed by 8 months of ageing in French oak barriques, the best batches are combined and the Merlot cuvée is aged for a further 4 months in barriques. After bottling, the wine rests in the bottle store for another 6 months before it is sold.
