The Comtes de Champagne Blanc de Blancs from Champagne Taittinger is a first-class, expressive sparkling wine made exclusively from the Chardonnay grape variety.
In the glass this Champagne captivates by its bright golden colour with bright green and almost fluorescent reflexes. The finest strings of pearls rise incessantly. This champagne reveals an emphatically fresh bouquet. Fragrant aromas of white flowers go hand in hand with mineral notes and juicy pears and sultanas - accompanied by a subtle hint of aniseed.
Expressive and with enormous power, this sparkling wine presents itself to the palate. In addition to lively citrus fruit, fine, slightly roasted aromas of caramelized grapefruit and salty-mineral notes can be tasted. The long finish is crowned by a beautiful fullness and a fresh acidity.

Vinification of the Blanc de Blancs Comtes de Champagne
Only strictly selected Chardonnay grapes from the five Grand Cru sites of the Côte des Blancs are used for this wonderful sparkling wine. The harvest is done by hand and the grapes are gently pressed in the vineyards. Only the fine must after the first pressing is used for this champagne.
The musts are fermented quickly in stainless steel tanks. For a short time approx. 5% of this wine matures for 4 months in new oak barrels. Afterwards the matured and unmatured wines are married to a base wine cuvée. With the addition of the filling dosage (yeast and sugar), the base wine is bottled and placed in Taittinger's deep chalk stollen for at least the ripening period. Through regular shaking and turning by hand, the yeast, which was initially on the bottom, gradually collects in the bottleneck.
This champagne is then degorged. The yeast plug is frozen in the bottle neck and the bottle is opened. The shortfall caused by opening the bottle is filled with a shipping dosage (sugar and wine) - therefore this champagne is classified as Brut.
