The Château Rozier Saint-Emilion Grand Cru AOC from the Saby family in Saint Emilion impresses with its dense purple colour and dark purple reflections in the glass. The nose develops a rich bouquet with notes of plums, sweet ripe berries and fine liquorice root. The taste is rich and aromatic, fruity and fresh, yet powerful and soft, full-bodied, with excellent structure and dense, silky tannins, the finish is very elegant and long lasting.
Vinification of the Château Rozier Saint-Emilion Grand Cru of Vignobles Saby
In keeping with Bordeaux tradition, this wine is made from Merlot and Cabernet Franc grapes, 80% and 20% respectively. The property of the Saby family is divided into many small plots and a total of 9 castles. One third of the Château Rozier vines grow on warm, deep, sandy soils at the foot of the slopes, another third grow in cooler locations on calcareous-sandy soils and the last third is south-facing, in a sunny position, on well-drained limestone soils. Depending on the location, the grapes develop silky tannins and ripe, fruity aromas, or aromatic freshness and meatiness, or fullness and elegance. The skilful assemblage of the grapes from the different plots gives the wine its fullness, elegance and richness.
The Merlot grapes are harvested at the beginning of September and Cabernet Franc at the end of September. The grapes are harvested manually, placed in small baskets and fermented in the traditional way. The wine then matures for about 15 months in the typical French Bordeaux barrique barrels, a third in new barrels, a third in one-year barrels and a third in two-year barrels.
