Château Hyot Côtes de Bordeaux Castillon from Château Hyot envelopes the glass in dense, dark purple. Its bouquet reflects the home terroir of the grapes in an especially expressive manner. Plenty of spicy, elegant fruitiness from plums, Morello cherries and wild berries with mineral nuances are accompanied by fine, toasted oak notes. It is straightforward, enormously elegant, and is full and bold on the palate with a good balance of juicy fruit, mature tannins, crisp acidity and zest. A distinctly fruity plum flavour preceeds a well-balanced, long finish with gentle minerality and an aromatic hint of toast.
Serve this delicious mélange with grilled steaks, cutlets and juicy lamb or beef roasts with a generous amount of rosemary and gently stewed tomatoes or mushrooms, but also with light oriental spices and piquante cheeses.
