The Extra Brut from Champagne Irroy is a fresh, elegant sparkling wine made from the Pinot Meunier (35%), Pinot Noir (35%) and Chardonnay (30%) grape varieties.
In the glass this Champagne shines in a bright straw yellow with glittering reflexes. The perlage is very fine and forms a beautiful mousseux due to the persistent ascending carbonic acid bubbles on the surface. The expressive bouquet reveals elegant aromas of white flowers (especially hawthorn), juicy peaches and pears - accompanied by notes of candied fruit and prunes. On the palate this French sparkling wine is wonderfully fresh with an elegant acidity. The subtle nuances of pink grapefruit, white-fleshed peach and pear give this champagne an opulent fruity fullness that lingers in the long finish.
Vinification of Irroy Champagne Extra Brut
This champagne is made from two different vintages. The grape varieties (Pinot Meunier, Pinot Noir and Chardonnay) grow in thirty different vineyard sites in Champagne. The grapes are harvested when perfectly ripe and fermented traditionally in stainless steel tanks.
The second fermentation takes place in the bottle. This sparkling wine matures at least 2 years on the bottle in the deep cellars of Champagne Irroy, before they are degorged and given the finishing touches with the expedition liqueur.
