Brocard's Chablis Vieilles Vignes from Bordeaux presents a bright golden yellow color in the glass. If you swirl the wine glass, you can perceive a first-class balance in this white wine, as it does not stand out on the walls of the glass in a watery, syrupy or liqueur-like manner. This varietal French wine reveals delightfully distinguished notes of grapefruit and apricot in the glass. This is joined by hints of vanilla.
On the palate, Brocard's Chablis Vieilles Vignes opens delightfully aromatic, fruit-driven and balanced. There are dry and really dry. This white wine belongs to the latter group, as it was vinified with only 1 g of residual sugar. On the tongue, this balanced white wine is characterized by an incredibly silky texture. Due to its lively fruit acidity, the Chablis Vieilles Vignes is fantastically fresh and lively on the palate. In the finish, this youthful wine from the wine-growing region of Bordeaux finally inspires with considerable length. Again, hints of apricot and grapefruit appear.
Vinification of the Chablis Vieilles Vignes from Brocard
This white wine clearly focuses on one grape variety, and that is Chardonnay. Only premium grape material was harvested for this exceptionally balanced single-vineyard wine from Brocard. After the hand harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Chablis Vieilles Vignes can continue to harmonize on the fine lees for a few months.
Food recommendation for Brocard Chablis Vieilles Vignes
This French white wine is best enjoyed moderately chilled at 11 - 13°C. It is perfect as an accompanying wine to leek tortilla, spinach gratin with almonds or spaghetti with caper and tomato sauce.
