Vinification of the Chablis Grand Cru Les Preuses
The winery Domaine William Fèvre is considered as the best of Chablis's winery. The chief oenologist of William Fèvre has made it his task to "let the wine speak through his terroir. The wines convince with terroir and sorts-typical minerality and finesse.
The Chardonnay grapes for the Chablis Grand Cru Les Preuses are cultivated in the Domaine's homonymous position and are selectively read manually to vinify only the best vine. After the harvest, the grapes are gently pressed and temperature-controlled fermented and matured. The wine ripens 14 to 15 months, of which 50 to 60% of the vintage in used French oak barrels, the remaining must in stainless steel vats. From 5 to 6 months the wine in the wooden barrels stays on the fine yeast (sur lie). The end of the maturationoccurs in small stainless steel tanks.
