The Cavanera Rovo delle Coturnie Etna Rosso DOC from Firriato comes with a bright red with dark violet reflections in glass. The nose carries elegant notes of nutmeg, red and dark berries and ripe peach. This red wine from Firriato is long-lasting, full-bodied with slightly peppery nuances. It miraculously reflects the expression of the wonderful volcanic terroir. With its polished tannin, Etna Rosso is a wine of a special class.
Vinification of the Cavanera Rovo delle Coturnie Etna Rosso DOC
After harvesting by hand, the must is fermented in wooden barrels at 24°-25°C for 18 days. After fermentation, malolactic fermentation also follows. Finally, the young wine is aged for 9 months in French oak and Slavonian oak barrels. The bottled wine is aged for 6 months in bottle.
