Vinification of the Cantine Minini Cataldo Cabernet Primitivo
The basis for the balanced Cataldo Cabernet Primitivo from Apulia are grapes from the Cabernet Sauvignon and Primitivo grape varieties. After the grape harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of fermentation, the Cataldo Cabernet Primitivo can continue to harmonize on the fine lees for a few months.
