Vinification of Castillo De Cheste Semi-Dulce Tinto
The hand-picked fully ripe grapes of the Anecoop are first destemmed, mixed and the resulting mash fermented in stainless steel tanks under temperature control. Then the mash is squeezed and this wine matures for a while in the tanks.
