Wine has been produced at Castello di Gabbiano for almost a thousand years. The ancient castle is located in the middle of the Chianti region and is fully dedicated to Tuscan red wine.

The history of Castello di Gabbiano begins in the 11th century. At that time, the square tower was built as a defensive measure for the traffic route between Florence and Siena. A century later the wine cellar of the castle was built.

After several families of owners, the castle got its present form in 1505 by the Soderinis, an influential Florentine family. Since the 19th century, the owners of the castle changed several times, and the current owners renovated the castle at the turn of the millennium.

Terroir of the Castello di Gabbiano

The vineyards of Castello di Gabbiano are strongly clayey and calcareous, the soil is very stony. A total of 147 hectares of vineyards extend around the Castello, 109 of which are in the Chianti Classico DOCG appellation.

The following grape varieties are cultivated:

  • Merlot
  • Cabernet Sauvignon
  • Cabernet Franc
  • Syrah
  • Petit Verdot
  • Colorino
  • Malvasia

The vines are trained according to the Guyot system. The viticulture is sustainable and the estate is certified by the VIVA program. 

Cellar and vinification

In the cellar of the castle there are typically stainless steel tanks in which the wine ferments before aging. The exact aging process differs due to the very different wines of Castello di Gabbiano. Thus, spontaneous fermentation is triggered in the Dark Knight, maolactic fermentation in barrique, for example, in the Chianti Riserva. The aging of the wine takes place in the historic cellar of the castle, which has been preserved to this day. Large barrels and barriques are located here, in which the wine of Gabbiano is aged.

The products made are very varied, so 9 Tuscan red wines and a rosé from the region are produced. In addition, Venetian white wines, Prosecco, an Apulian red wine and a Sicilian red wine are also marketed under the Castello di Gabbiano brand, as well as various specialties such as Vinsanto, grappa or olive oil.
