The Brut Rosado DO of Segura Viudas reveals a brilliant bright strawberry red with salmon highlights. A fine, opulent and persistent mousseux that produces a beautiful crown stands out.
Youthful aromas of strawberries, red currants and grenadine enrich the nose. This cava is refreshing on the palate, with an intense fruity flavor full of cherry fruit and a light, balanced acidity. The soft finish gives it a wonderfully unlocked balance.
The Trepat grape provides the fruit freshness, aroma and finesse, while the Garnacha grape enhances the flavor.
Vinification of Brut Rosado
The grapes are harvested by hand, destemmed, pressed and clarified. The resulting must is statically decanted for 24 hours to favor the fruitiness and elegance. Then, separated by grape juice, the first and second fermentation takes place with selected yeast strains to give structure, complexity and a beautiful mousseux. Before bottling, various additions are added to this cava so that a second alcoholic fermentation takes place in the bottle. This is followed by aging on the lees for at least 12 months, usually 18 to 20 months. At the end of the aging, during a shaking process lasting several weeks, the dead yeast in the neck of the bottle is first concentrated and finally flash-frozen and degorged (removed). The bottle is now topped up with an exclusively composed dosage, corked, labeled and shipped.
Food recommendation for the Cava Rosado Brut
Serve this Cava Rosado as a stylish aperitif or companion to sushi, tapas, seafood salads and fish and vegetable appetizers. It also harmonizes wonderfully with seafood ice cream (arroz de marisco) or grilled tuna.
