Vinification of the Brunello di Montalcino from Villa Poggio Salvi
The basis for the powerful Brunello di Montalcino from Italy are grapes from the Sangiovese grape variety. The grapes grow under optimal conditions in Tuscany. Here, the vines dig their roots deep into marl soils. Brunello di Montalcino is an Old World wine in the best sense of the word, as this Italian wine exudes an extraordinary European charm that clearly underlines the success of wines from the Old World. The grapes for Brunello di Montalcino are harvested exclusively by hand at optimum ripeness, without the use of coarse and less selective machinery. After the harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in large oak barrels at controlled temperatures. Once fermentation is complete, the powerful Brunello di Montalcino is matured for another 30 months in large wooden barrels made from Slavonian oak.
