More information about Bourgogne Hautes Côtes de Nuits AOC - Domaine Moillard

In the glass, the Bourgogne Hautes Côtes de Nuits of Domaine Moillard shows a bright light red color. After the first swirl, one can perceive a perfect balance in this red wine, as it does not stand out watery or syrupy or liqueur-like on the walls of the glass. In the glass, this red wine from Domaine Moillard presents aromas of plums and black currants, complemented by cinnamon and pepper. This wine delights with its elegantly dry flavor. It was bottled with exceptionally little residual sugar. This is a real quality wine, which clearly stands out from simpler qualities and so this Frenchman enchants naturally with all dryness with the finest balance. Excellent taste does not necessarily require residual sugar. On the tongue, this well-balanced red wine is characterized by an incredibly melting and dense texture. On the finish, this youthful wine from the Burgundy wine-growing region finally delights with exceptional length. There are again hints of plum and black currant. In the aftertaste, mineral notes of the soils dominated by slate and gravel are added.

Vinification of the Bourgogne Hautes Côtes de Nuits from Domaine Moillard

The basis for the balanced Bourgogne Hautes Côtes de Nuits from France are grapes from the Pinot Noir variety. In Burgundy, the vines that produce the grapes for this wine grow on soils of slate and gravel. The fact that the Pinot Noir grapes thrive under the influence of a rather cool climate also has an influence on the ripening of the grapes that cannot be denied. This results, among other things, in particularly long and even grapes and rather moderate alcohol content in the wine. At the time of optimal ripeness, the grapes for the Bourgogne Hautes Côtes de Nuits are harvested exclusively by hand without the help of punishing and less selective machines. After the harvest, the grapes arrive at the winery by the fastest route. Here they are selected and gently broken up. Fermentation then takes place in large wood at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.

Food pairing for the Bourgogne Hautes Côtes de Nuits from Domaine Moillard

Drink this red wine from France best tempered at 15 - 18°C as an accompaniment to cod with cucumber-mustard vegetables, asparagus salad with quinoa or vegetable salad with beetroot.
