Vinification of the Bourgogne Hautes Côtes de Nuits from Domaine Moillard
The basis for the balanced Bourgogne Hautes Côtes de Nuits from France are grapes from the Pinot Noir variety. In Burgundy, the vines that produce the grapes for this wine grow on soils of slate and gravel. The fact that the Pinot Noir grapes thrive under the influence of a rather cool climate also has an influence on the ripening of the grapes that cannot be denied. This results, among other things, in particularly long and even grapes and rather moderate alcohol content in the wine. At the time of optimal ripeness, the grapes for the Bourgogne Hautes Côtes de Nuits are harvested exclusively by hand without the help of punishing and less selective machines. After the harvest, the grapes arrive at the winery by the fastest route. Here they are selected and gently broken up. Fermentation then takes place in large wood at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.
