When perfect physiological ripeness is assured, the grapes for Bordeaux Supèrieur are harvested exclusively by hand without the aid of punishing and less selective grape harvesters. After the hand harvest, the grapes arrive at the winery by the fastest route. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. After its end, the elegant Bordeaux Supèrieur is aged for several months in oak barrels.
