The basis for the first-class and wonderfully balanced cuvée Bordeaux Supèrieur of Château Croix Mouton are Cabernet Sauvignon and Merlot grapes. In Bordeaux, the vines that produce the grapes for this wine grow on soils of clay. Due to the balancing influence of the nearbyRiver, the grapes ripen more slowly and develop more aromatic complexity. Bordeaux Supèrieur is an Old World wine through and through, as this Frenchman breathes an extraordinary European charm that clearly underscores the success of Old World wines. When perfect physiological ripeness is assured, the grapes for Bordeaux Supèrieur are harvested exclusively by hand without the aid of punishing and less selective grape harvesters. After the hand harvest, the grapes arrive at the winery by the fastest route. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. After its end, the elegant Bordeaux Supèrieur is aged for several months in oak barrels.
