Tormaresca's Bocca di Lupo Castel del Monte DOC is a terroir wine with an impressive personality for lovers of Apulian wines. In the glass, the Bocca di Lupo shines in a dense, deep ruby red. On the nose a complex bouquet opens with intense, complementary aromas of red fruit and dried fruit, cherries, mulberries, plums, followed by spices reminiscent of liquorice, pepper, tobacco, herbs and balsamic notes. This Aglianico is elegant on the palate, with firm tannins, exceptional structure and full body, the texture balanced, tasty round and harmonious. Long-lasting and with a good persistence in the finish.

Vinification of Tormaresca Bocca di Lupo Castel del Monte DOC

The grapes of this pure Aglianico are harvested manually at the time of optimal ripeness. After pressing, the must is macerated in stainless steel tanks at about 25° Celsius with the skins and alcoholic fermented. The skins are gently pumped under again and again with a special technique that allows the gentle and even extraction of colour, aromas and tannins. After the extraction from the skins, the wine is immediately transferred into French oak barriques, in which the malolactic fermentation takes place and then the ageing for 15 months. After bottling, the wine matures for another 24 months in the bottle before being sold.

Bocca di Lupo was born from the desire to rediscover this noble and austere indigenous grape variety and reinterpret it as an Apulian terroir wine. From fully ripe grapes, dense and mature wines with great development potential over years are produced . Bocca di Lupo represents the culmination of years of hard work and research to vinify a wine according to the ideas of Tormaresca, which began in 1998.
