The grapes for this white wine from France, when perfectly ripe, are harvested exclusively by hand. After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully ground. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. The vinification is followed by a few months of aging on the fine lees before the wine is finally drawn into bottles. The aging in oak barrels is followed by a considerable aging in bottle, which makes this white wine even more complex.
