Vinification of Villa Sparina Blanc de Blancs Brut

The Blanc de Blancs Brut is an Old World wine in the best sense of the word, as this Italian wine exudes an extraordinary European charm that clearly underlines the success of wines from the Old World. When they are perfectly ripe, the grapes for the Blanc de Blancs Brut are harvested exclusively by hand without the use of coarse and barely selective machines. Following the harvest, the grapes are brought to the press house as quickly as possible. Here they are selected and gently pressed. This is followed by fermentation of the base wines. Once the cuvée has been assembled, the wine is aged using the classic bottle fermentation method. This is followed by bottle ageing for 36 months.
