Vinification of Beyond the Clouds by Elena Walch
Castel Ringberg is the most important wine location of Elena Walch in the Alto Adige DOC. It is located at 350 meters above sea level above Lake Caldaro. The climate here is considered to be particularly mild. On the rather barren, calcareous soils, wines with an exceptional authenticity are produced. The different grape varieties for Elena Walch's Beyond the Clouds are harvested at the same time as the Chardonnay reaches its peak. Sauvignon Blanc adds freshness, acidity and green-fruity notes, while the Gewürztraminer adds tropical-fruity aromas of lychee and nashi pears to this cuvée.
The peculiarity of the vinification of Beyond the Clouds is the common mashing, pressing and fermentation of the grapes in French barrels. After fermentation, there is a weekly Battonage for 3 months, i.e. stirring the whole yeasts in the wine. After 10 months of ageing in a barrique, the Beyond the Clouds white wine can be refined on the bottle for at least 6 months.
