This is followed by fermentation in small wood at controlled temperatures. At the end of this process, the powerful Bayamore Rosso di Rosso Sicilia is matured for another 9 months in French oak barriques. The ageing in wooden barrels is followed by a long period of bottle ageing, which makes this red wine even more complex.
