In the bouquet black berries shifting with small red fruits, giving a beautiful freshness, gently complemented by cocoa notes. On the palate, this natural sweet wine from Banyuls unfolds a sumptuous balance between the sunny power of the wine and the finesse of the tannins. In the finish long lasting, with a sweetness that becomes an absolute pleasure.
Vinification of the Banyuls Rouge Bila-Haut AOC by M.Chapoutier
The Banyuls Rouge Bila-Haut AOC by M.Chapoutier is a Vin doux naturel from 100% Grenache grapes, harvested very ripe, almost rosinized, selectively hand picked, destemmed, crushed and macerated. By adding high alcohol, the fermentation is stopped for the Mutages sur Grains, a process from the year 1285, to extract fruity notes and tannins. The wine then matures in vats for 8 months. After bottling, another ageing over 3 months.
