Vinification of the Joseph Drouhin Aligoté Bourgogne
This white wine clearly focuses on one grape variety, and that is Aligoté. Only premium grape material was harvested for this exceptionally balanced single varietal wine from Joseph Drouhin. The grapes grow in optimal conditions in Burgundy. Here, the vines dig their roots deep into soils of limestone and marl. When perfect physiological ripeness is assured, the grapes for Aligoté Bourgogne are harvested exclusively by hand without the use of punishing and barely selective machinery. After the grape harvest, the grapes are quickly taken to the winery. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally drawn into bottles.
