Alfonso Oloroso Jerez by González Byass is an expressive sherry made exclusively from the Palomino Fino grape variety. The grapes grow in the Spanish wine region DO Jerez.
In the glass, this wine shimmers in a wonderful amber color with golden highlights. The intense bouquet enchants the nose with multi-layered aromas of nuts - hazelnut and almond in particular stand out - accompanied by warm notes of oak and filigree hints of truffle and leather. This sherry is wonderfully dry on the palate and full-bodied with good texture and presents a multi-layered aroma of nuts, toast and wood and a hint of vanilla. The final convinces with a very good length.
Vinification of the Alfonso Oloroso Byass After the careful harvesting
ofthe Palomino Fino grapes, the harvested goods are brought to the wine cellar of Gonzalez Byass. There the berries are pressed - for this sherry the strong "mosto de prensa", the must of the second pressing is used. At low temperatures, this sherry is fermented in stainless steel tanks and then sprayed on to 18% by volume and placed in the top row of barrels, the sobretabla of the Alfonso Solera. This sherry matures in the Solera barrels for about 8 years before this wine is bottled.

This sherry is a great companion to pork pastries, oxtail in dark sauce or to mushroom pans. We recommend that you hand the Byass Alfonso Oloroso in a white wine glass so that it has room to unfold its bouquet.
