Vinification of Achelo Cortona Rosso DOC from La Braccesca
This tasty red wine is made from 100% Syrah, which grows in the vineyards on the borders between Montepulciano and Cortona on dry, clayey soils. The harvest for the Azehn days is cold macerated to highlight the typical fruity notes of the variety. Fermentation takes place at a controlled temperature up to a maximum of 28°C for ten days. Then 70% of the wine is put into used barriques in the second and third stages, where it undergoes malolactic fermentation and matures, the rest in stainless steel vats. After bottling, the wine is left to mature in the bottle for a few months before being sold.
The name Achelo stands for the torn off horn of the God Achelo in the fight with Herakles, in ancient mythology a symbol of abundance and fertility.
The Achelo Cortona DOC can be stored for 4 to 5 years.
