The term "appassimento" comes from the Italian "appasire", which translates as "to wither" or "to let wither". The grapes are dried on straw mats or in wooden crates in storage rooms or in the open air. The resulting loss of water makes the sugar content and aromas particularly concentrated. Moreover, only absolutely intact grapes are used in the process.
