The Appassimento process - developed in Italy - produces particularly full-bodied and fruity wines with high alcohol content. The name says it all here, since you don't get such intense heavyweights in the bottle just like that. The term "appassimento" comes from the Italian "appasire", which translates as "to wither" or "to let wither". The grapes are dried on straw mats or in wooden crates in storage rooms or in the open air. The resulting loss of water makes the sugar content and aromas particularly concentrated. Moreover, only absolutely intact grapes are used in the process.
